A Feast for Sir Richard Payne Knight

Today is the Feast of Sir Richard Payne Knight, author, scholar, and Gnostic Saint. He was a friend of George Gordon, Lord Byron. His first book, Discourse on the Worship of Priapus, was published in 1786. In remembrance of this scholar of phallic worship, we present sausage recipes.

Ingredients

  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 pound orzo pasta
  • 3 cups chicken stock
  • 3 cups water
  • 1 tbs kosher salt
  • 2 tbs olive oil
  • 7 oz (2 links) mild Italian turkey sausage, casings removed
  • 1 clove garlic, minced
  • 2 plum tomatoes, chopped
  • 1/4 tsp red pepper flakes, optional
  • 2 tbs chopped fresh flat-leaf parsley
  • Salt and freshly ground black pepper
  • 1/2 cup ricotta salata cheese, crumbled
