Sausage and Potatoes and Good Report

I have been concentrating solely on the Revision and copying of the Ritual. Therefore I now live just as I always live in order to get a definite piece of work done: concentrating as it were “off” the Work. As Levi also adjures us by the Holy Names.

Coming back from lunch (a dozen Marennes Vertes [green oysters] and an Andouillette aux Pommes) I met Zelina Visconti, more lovely-ugly than ever in her wild way. She says that she is favourably disposed towards me, on the recommendation of her concierge!!!

Andouilette aux Pommes could mean sausage with apples or sausage with potatoes. Pommes are apples, and pommes de terre are potatoes. Today we’ll do potatoes, and tomorrow we’ll do apples. Both recipes are delicious.

Gratin D’Andouillettes aux Pommes Lyonnaises (Sausage with Pan Fried Potatoes)

  • 7 potatoes
  • 2 medium onions
  • 1 cup fresh whipping cream
  • 1 tbs mustard
  • 1/3 cup of breadcrumbs
  • 1/3 cup butter
  • 4 cups chicken broth
  • Salt

Peel the potatoes and cut into slices about ¼ inch thick. Rinse and drain.

Peel and finely chop one onion.

Preheat the oven to to 425 °F.

Heat half the butter in a pan until it is a hazelnut color. Add the onion and cook until it starts to look translucent. Then add the potato slices and pepper, and pour in the hot chicken broth. Bring to a boil.

Arrange the potatoes in a baking dish and pour broth over it until it just covers the potatoes.

Bake about 30 minutes.

While the potatoes are baking, peel and finely chop the other onion.

Peel the sausages and cut into pieces that are about half an inch thick.

Heat the remaining butter in a skillet and fry the chopped onion. Add the sausage, stir well, and heat thoroughly.

Once the sausage is hot, pour the cream over it, heat, then remove the pan from the heat. Add a tablespoon of mustard, and mix.

Once the potatoes are cooked (check with the tip of a knife), pour the sausage mixture int0 the pan, and sprinkle with breadcrumbs, and let broil for 3 to 6 minutes.
