Scary Halloween Appetizers

Eye of Newt Green Eggs
These are weirdly perfect and really tasty.

Ingredients:

8 Eggs, hard-boiled, cooled and halved
1 large and ripe avocado
1 Tablespoon lemon juice
1 Tablespoon minced onion
1 Tablespoon minced cilantro
1/2 Teaspoon minced garlic
Salt to taste
Black olives

Directions:
With a pushpin make one hole at the narrow end of the egg, place in a saucepan and completed cover with cold water. Bring to a boil for ten minutes and then blanch them in ice water. When chilled, peel and cut in half and remove the cooked yolk. In a mixing bowl, blend until smooth the yolks with the avocado, lemon juice, minced garlic, onion and cilantro. Salt to taste and then fill the eggs. With a toothpick, drag it through some paprika and then streak the egg whites for ghoulish blood streaks. Garnish with one olive in the center. Makes 16 egg halves.

Brains on a Slab
Looks scary, but tastes good. The brains are shrimp the slab a cracker.

Ingredients:
Vegetable oil
1 ½ Cups chicken stock
4-Ounces of cream cheese, softened
1 Envelope unflavored gelatin
¼ Cup minced green onions
1 Pound cooked bay shrimp
1 Teaspoon lemon juice
½ Teaspoon Worcestershire sauce
1 Pinch salt
Cocktail sauce

Directions:
Use a little vegetable oil to coat the individual depressions in a deviled egg server.
In a medium saucepan heat the stock until warm, dissolve the gelatin, and remove from the heat to cool down a bit. Then stir in the cream cheese until melted, add the lemon juice, salt, the Worcestershire sauce and the bay shrimp and mix well. Pack each depression and chill until firm. Pop the shrimp halves out, place on a cracker and dribble with cocktail sauce.
