Make your own Cornichons

Tiny pickle on a fork

Still craving that delicious Parisian sandwich? Unless you happen to live near a gourmet shop, you may need to make your own cornichons. This is a good excuse to start your own backyard garden, as it’s hard to find tiny baby cucumbers at the grocery store.

Ingredients:tiny pickles in a jar

  • About 1 generous pound of cornichons (tiny, finger-sized cucumbers)
  • 2 scant tbs coarse salt
  • 1 leafy sprig fresh tarragon
  • 1 clove garlic, cut lengthwise in quarters
  • 1/2 cup very small pearl onions, peeled
  • 10 peppercorns
  • 2 to 3 whole cloves
  • 1 bay leaf
  • 3 cups white vinegar
