AlmondsDerived from Old English Wōdnesdæg and Middle English Wednesdei, “day of Woden,” the word Wednesday ultimately means the same thing as dies Mercurii, or “day of Mercury.” Almonds are said to be sacred to Mercury, so today we’ll look at a couple of almond recipes.

Blueberry-Almond Crumble

Ingredients for the Filling:

  • 2 to 2 ¼ lbs (about 36 oz) fresh blueberries, rinsed and well-drained
  • 2 tbs lemon juice, freshly squeezed
  • 1 tsp lemon zest (zest of 1 lemon)
  • 3 tbs all-purpose flour
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon

Ingredients for the Topping:

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 1/8 tsp (generous pinch) of salt
  • 8 tbs (1 stick) cold, unsalted butter, diced
  • ½ cup quick-cooking oats
  • 1 cup sliced almonds, divided

Grilled chicken with almond and raspberry relish

  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 2 tbs olive oil
  • 1 tbs freshly squeezed lime juice

Almond and Raspberry Relish

  • 1/2 pint raspberries, divided
  • 1/2 tsp lime juice
  • 1/2 tsp finely minced or pressed garlic
  • 1-2 tsp honey
  • 1/8 tsp salt
  • 2 tbs vegetable oil
  • 1/3 cup sliced almonds, roasted
  • 1/3 cup chopped scallions
