Today, June 2, is the Birthday of actor Dominic Cooper, known to many for his role as Howard Stark in “Captain America: The First Avenger” and the “Agent Carter” television series. There are some indications that the character of Howard Stark might be loosely based on Jack Parsons, late master of Agape Lodge in Oakland, California. Certainly his physical appearance does have some similarity. Dominic Cooper was born 1978 in Greenwich, England.
In honor of Dominic Cooper’s birthday, we present a recipe for Pie and Mash, a traditional menu item available from Goddards at Greenwich.
Pie and Mash
- 1 tbs olive oil
- 1 onion, chopped
- 2 cloves garlic, finely chopped
- 1 lb minced beef steak or beef mince
- 1 tsp English mustard
- 1 tbs tomato purée
- 1 beef stock cube
- vegetable oil
- 5 oz brown ale
- 3½ oz beef stock
- 2 tbs plain flour
- salt and freshly ground black pepper
For the suet pastry
- 1 ½ cup self-rising flour, plus extra for dusting
- 1 cup beef suet
- large knob of butter, softened, for greasing
For the pie crust
- 1 lb ready-made shortcrust pastry, for the top of the pie
- 1 egg yolk, lightly beaten
For the mashed potatoes
- 2 large potatoes, peeled and cut into chunks
- 3½ oz hot milk
- knob of butter
- drizzle chili oil (optional)
For the parsley liquor
- 2 oz butter
- 2 oz corn starch
- 18 oz chicken stock
- generous bunch parsley leaves, chopped
- 1-2 garlic cloves, roasted and puréed, to taste
