Noted in the Thelemic Seasonal Calendar as the Feast of Cattle, Little and Big, the first of May is also called Beltane or May Day. All three feasts celebrate life bursting forth in the Spring, some with religious observation, some with rituals to protect crops, livestock and people. Some earthier observances celebrate sexuality and fertility.
In honor of the blessings of Spring, here is a recipe to celebrate the bounty of the garden or farm.
Prosciutto Phyllo Asparagus Roll-Ups
Preheat oven to 400° F.
- 24 sheets phyllo dough (14 inches x 9 inches)
- ¼ cup butter, melted
- 8 thin slices prosciutto, cut into 1-inch strips
- 24 fresh asparagus spears, trimmed
- 24 fresh green beans, trimmed
Artichoke Sauce:
- ¼ cup sour cream
- ½ tsp lemon juice
- 1 jar (6 oz) marinated artichoke hearts, drained
- 2 oz cream cheese, softened
- ¼ cup chopped roasted sweet red peppers, drained
- 3 tbs grated Parmesan cheese
- 2 green onions, chopped
- 1 garlic clove, peeled
- ¼ tsp white pepper
- ¼ tsp cayenne pepper
