An Appetizer From A Feast in the Sign of Gemini Menu

Fava Bean and Almond Dip
The seasonings really perk up the beans and the almonds lend a nutty flavor.

Ingredients
2 cups cooked fava beans (canned is okay, but drain and rinse)
¼ cup almonds, sliced (save a pinch for garnish)
¼ cup yellow onion, minced
2 tablespoons lemon juice
1 teaspoon garlic, minced
1 teaspoon savory, dried
½ teaspoon celery salt
2 tablespoons almond oil
⅛ teaspoon white pepper

Directions
In a food processor or blender put the lemon juice, garlic, almond oil, dried savory,pepper and the fava beans. Whir until smooth. Slowly add the almonds until they become creamy, adding a splash of water so that the mixture whirs smoothly, but is not runny. Chill before serving. Use a pinch of the sliced almonds for garnish.

Lemon juice is water of the Moon in Cancer. Garlic and white pepper are fire of Mars in Aries, and onion is water of fire of Mars in Aries.
