Lentil Mushroom and Sweet Potato Shepherd's Pie

Tomorrow, April 25, is the Feast of St. Manes, “Also known as Mani or Manichaeus; Persian philosopher and religious teacher, founder of the Gnostic religion of Manichaeism (see Chapter 201 of Liber Aleph).” You can read more about Manichaeism in the Encyclopaedia Britannica.

St. Manes divided his followers into two groups, the Hearers and the Elect. The Elect were only allowed one vegetarian meal a day, so here’s a vegan dish that would make that meal a delicious one. It’s also gluten-free.

Lentil, Mushroom & Sweet Potato Shepherd’s Pie

  • Lentil Mushroom and Sweet Potato Shepherd's Pie5 medium sweet potatoes, scrubbed
  • 1 cup brown or green lentils, washed and picked over
  • ¾ cup uncooked steel cut oats
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, divided
  • 1 medium yellow onion, chopped
  • 1 large carrot, chopped
  • 1 celery stalk, chopped
  • 1 garlic clove, minced
  • ¾ cup low-sodium vegetable stock
  • ¼ cup red wine
  • 1 tbs tomato paste
  • 1 tbs soy sauce or tamari
  • 1 tsp smoked paprika
  • ¼ cup chopped fresh parsley
