Oysters are a popular food item in Paris, prepared in various ways. Paris by Mouth recommends, “Squeeze a little lemon on top, pour some mignonette sauce in the shell, or forgo all condiments and slurp it back in one gulp.”

To make mignonette sauce, Bon Appetit tells us, “Stir 1/4 cup red wine vinegar, 1 tablespoon minced shallot, and 1/4 teaspoons freshly cracked black pepper in a small bowl. Drizzle over shucked oysters.”
