Although of course it has changed management over the years, Boulangerie Basso is still open, serving pastries, bread, sandwiches and salads. At last check, the bakery’s Facebook page had 666 “likes.” Crowley might have indulged in one of the delicious pastries, or perhaps a sandwich. He doesn’t tell us, so we can only speculate.

Crowley might have eaten something like these at Basso. Alternatively he could have eaten something like this special French cake, named for the patron saint of pastry bakers.

Puff pastry:

  • 250g flour
  • 125g water
  • 1 pinch of salt
  • 185g unsalted butter

Choux pastry:

  • 250ml water
  • 200g flour
  • 100g unsalted butter
  • 1 pinch of salt
  • 4 eggs

For the crème pâtissière:

  • 1 litre milk
  • 125g castor sugar
  • 240g egg yolks
  • 125g sugar
  • 90g crème pâtissière powder
  • 2 vanilla pods
  • 25g raspberry liqueur

For the caramel:

  • 500g dark brown sugar
  • 200g water
  • 70g glucose (you can buy this at candy supply stores)
